Some Eastern Europe Scenario's perhaps?
14 year war 1444 (TO vs. Poland and Lithuania) where the Teutons tried to avenge their loss at Grunwald. The Polish Levy was so incompetent that the King needed to spend loads of $$$ for merceneries. The war lasted 14 years and the Poles finally won and got back more lands. The Teutonic order was again crippled.
War in the Inflants. Countries: Gdansk (merchants-Polish revolters), Sweden and Muscovy. This is the first Inflant War were two military geniuses of the time fought head to head: Stephen Bathory, Prince of Siebenburgen, King of Poland and Ivan IV The Terrible. The war was a Polish victory and Bathory conquered many lands (Smolensk, Vilikie Luki). Gdansk was revolting because Bathory was not the King elected by the gentry (Polish tradition, elections of king) as they elected Maximillian the Habsburg.
The Turkish invasion of Poland in 1672(ended 1673). Turkey gathered it's troops in the European theater in order to invade and conquer all of christianity. Thousands of Jannisaries poured into Rzeczpospolita and even though seriously outnumbered, the Poles defeated the Turks (though they were finally defeated in 1683 in Vienna). Turkey would have numerical advantage but attrition problems (it was winter). The Poles on the other hand will have Sobieski, who will be the only one competent enough to save them.
Just some broad ideas for Eastern Europe...
