The game is not designed for it, but if you don't mind adding the tag back to the savegame every time, you can play as them.
In a scenario where the order exists, add their tag to the top of your savegame where all the tags are listed.
Templar Knights = TEMP
Knights Hospitaler = HOSP
Teutonic Knights = TEUT

What happens at time of inheritance?? ... is it game over if your son is not top of the heir's list?

I tried a game as teutonic knights, there are some weird things, some guys are allowed to marry, others not, but it works decently. Seems there is no demense limit (and you cannot have vassals or create/grab titles), something that probably is a decent representation, (local templar houses controlling that area) and it helps generate the immense wealth the orders were famous for - something you need for all the wars you get dragged into

You also get a lot of AI events that constructs templar houses, and you may get events that launch mini-crusades, giving you 5000 men to bash heatens with (or Poles :rofl:)

It is interesting, although a bit annoying when you get a new GM and "loose" - I even got an event that said a dynasty had formed and that laws would change to semisalic somethingorother, but it was still elective law
