In my latest game, the Crusades have been very successful everywhere but Spain. It seems that there is only a handful of potential crusade targets and that the Pope will randomly choose one of those. But Jerusalem, Antioch, Alexandria, Sicily, Cordoba, and Tunisia are all in Christian hands.

Are there other crusader targets? Will the Pope eventually just pick a random province? Or will there just never be another crusade unless the Muslims reclaim some land?

Rome is a crusade target too I believe :)

If there are no more crusade targets in muslim hands, no new crusades will be called.

5. Byzantion
6. Roma
7. Palermo
8. Cordoba
9. Burgos

Crusades will only be called against these provinces if they are not in Christian (Catholic or Orthodox) hands.

When Rome falls, an event may fire then ends the then ongoing Crusade and a Crusade to liberate Rome will be called.

Muslims have no options to end a Crusade besides the fact of holding the Crusade target long enough, then an event may fire that ends the Crusade.

When a Crusade-target is held by a Christian and the Crusade is still going on, Muslims may declare war on who holds the Crusade-target

In addition to already named provinces, possible targets for a crusade are also Cadiz, Valencia, Lisboa, and Toledo.
