So I've been playing as a dynasty with Latin culture in western Anatolia and Syria, but I can't seem to spread Latin culture naturally. I've been able to convert a few provinces by using Crown focus or picking the genocide option after nationalist revolts, but I can't get it to spread naturally, even though nearly every landed character in my realm has Latin culture and I've ruled the area for over a hundred years. Any help?

Throughout my entire game, with nearly every landed character in my realm having Latin culture and having the "convert province" ambition active for half of some of my character's lifetimes, I've seen exactly one province change culture dynamically without CF or genocide, and it wasn't even in my demesne. I've had two rulers with learning above 15, and absolutely nothing happened during their lifetimes. Maybe I'm just impatient, but that seems kind of odd.
 
I had the same problem. I was playing as Italian king of Sicily and couldn't convert my provinces. Then I decided to convert into Siculo-Arabic. Boom, almost whole country became Siculo-Arabian in 50 years. Don't know how it works (probably doesn't works, at least for me).

RNG aka Random Norse Gods. But "experts" call it random number generator.

No such thing I say... It's magic. An weird.

It also depends on the starting game options. I do think that melting pot cultures have higher chance to convert than regular ones AND you can set their appearance to be much more frequent trough the options.
