Um...what do they do exactly? The other advisers are pretty self-explanatory, but there seems to be absolutely no in-game clues as to what your choice of bishop affects and I couldn't find it in any of the FAQs or the wikis. Does anyone know? Do they do anything at all?

As it is I just appoint whoever the craziest, lustiest, most insane and depraved priest I can find to the post and then choose whatever options will hasten their descent into madness because I'm easily amused like that :D

So most important is a high diplomacy and then high everything else is a plus?

Is his piety or prestige of any great importance?

This is a general rule that advisors (with their skill level and secondary educational traits) have effect on child's education only in case their diplomacy skill is 7 or higher. All the other 4 advisors affect child's skill that is relevant to their position (Marshal influences martial skill, Spymaster intrigue etc), but I'm not clear what skills are affected by Diocese Bishop.

I'm not 100% sure, but some few events might require Diocese Bishop with a piety at least 10.

Diocese Bishop's traits can help or hinder mass conversion, turning heretic provinces into Christian ones.
Of course, if he's sceptical, you'll never get that kind of events ;)
I think there are details in some of the FAQ thread.
