Dragons is like a character itself? I'm new in GOT but I really don't get it why dragons take up character slots

Because that way they can grow in age and as they get older their martial increases. This allows for a difference in strength from Balerion compared to Drogon and it also allows for Dragon duels such as those in the Dance of the Dragons

I edited my save game file to change "Moonfyre" (gag) to "Tanqyrhae".
