There are no options for this, that I can see. (no pun intended). How can one prevent the viewing of troop numbers/type of other nation/opponents?

There is already fog of war. You have a "buffer" of visible territory of one province outside your borders. I think you can also see what's going on in allied and vassal/liege territory.
As for troop numbers - if an army is visible, you can see how many men it has. This isn't exactly an exploit - tens of thousands of men marching around couldn't exactly hide themselves.
