Grammar rules

I've seen in the cultures.txt the next code:

grammar_transform = spanish

I've only found two languages: Spanish and French. I suppose these are for surname creations, because the Spanish patronimic -ez doesn't make Sancho's son Sanchoez but Sanchez. So those rules must be somewhere, but I'm unable to find them. Does anyone knows where they are?

That'd be a shame, since I'd need something similar for Old Norse (Óláfr -> Óláfsson. Loses the -r.).

I don't know about that. While they try to make many things moddable, of course, there's always a fair chunk that's locked into the game code. Duchy limits, diplomatic options, etc etc...
