If I remove the "Norwegian_invasion" file, will I get rid of that war when I start a new game?
I want to play as a Norwegian count, but the constant wars are destroying me every time I try

Yes. But you could also just play from a starting point after Stamford Bridge. You're really only missing out on one month or so.
