This is probably really easily answerable but here goes.

When I attack a province and destroy the enemy army, I assault the remaining fortress and destroy the entire garrison there. At this point, I end up occupying the province been don't control it. How do I take control of the province so that I can get taxes from it and my borders will expand to envelop it?
 
You basically have to wait for the "official" takeover. This occurs when you sign a peace treaty with the country in question and they offer you the land. Even if you conquer 4 provinces, the maximum land you can get is 3 provinces. This is usually a bit hard though as you need to control the Capital of the country in question to get three provinces. Usually you only get 1 or 2 provinces out of a war. So plan ahead, set goals in the war and stick to them, unless something unexpected happens.

Just rectifying something that could be misunderstood:

You don't HAVE to control the capital to get three provinces out of the war, but it certainly helps! If the country is REALLY desperate, they might offer you three provinces even if you only control three, just to get you off their back.
 
When you go to the peace treaty screen, look at how many
stars you have. The more stars you have, the more land and
money you can demand from the enemy. You'll get the
hang of it.

You get stars by winning battles. You get gravestones when you lose battles. Note that you cannot demand any tribute unless you have won battles.
Go in to the settings for the messages and edit them. Especially when peace offers or invitations to join a war arrive it can be good that the game stops so you can get some time to think.

In my experience, getting a star from battles is very random. I've received stars, as has my opponents, from winning huge battles, or from winning trivial battles. As said, taking provences is the way to get stars. My favorite experience is when I accidently moved roughly 700 infantry into the wrong provence (the enemy had 60,000 or so) during a war - obviously, I was beat immediatly, but the enemy got a star! Well, I suppose I deserved it, but still...

When you attack another country, they will start out by demanding money for peace. If you win a province, they may offer you the province, or perhaps they'll offer a white peace. If you win a bunch of provinces, you may be offered between one and three provinces. At any point, you can take the offer and your war with that country will end, although in many cases you will have revolt risk in the newly obtained provinces for many years.

If you want provinces other than what they offer, you can offer peace and ask for the ones you want.

If you have six stars you can usually get two provinces, but it's hard to get three. If you want three provinces of your choice, expect to have to do some serious damage and ask several times.

If you control all of their provinces you can annex them. In the GC you can't annex a major country, meaning any of the countries you can choose from when you start the game.

There is an internal variable known as "badboy" that is important to think about if you are fighting a lot. If you annex entire countries or declare wars on European countries without a casus belli, your badboy value will increase. If it gets too high, the computer opponents will tend to declare war on you when you are at war with someone else.
