Every time I open a game using the paradox launcher, I get this error message. Besides Stellaris, this also happens whenever I try to open EU4, HOI4, and Imperator.
 
Are you on MacOS 11.x or earlier perhaps? If so this is a launcher problem currently under investigation.

Can you update to MacOS 12.5.1 ?
