Please don't rip my head off
This is off the top of my head, and not 100% completely worked-through.
Why not either add a few more starting dates, or replace a few of the "less important" ones (like "The Rogue Prince" or "After the Spring")?
I would love the opportunity to have a starting date that would allow you to choose how you're gonna react to Rhaegar's taking Lyanna. The reactions of houses Stark and Baratheon could have been different (well "could"....you know what I mean), and thus the whole rebellion be avoided. Indeed, Rhaegar could have chosen to come to his senses and not crown Lyanna Queen of Love and Beauty - or at least not kidnapped her.
So a starting date at the close of the tourney at Harrenhal could be good there.
Similarly - it could be fun to have "A Clash of Kings" start at the time of Robert's death - which then unlocks a million possibilities for different results: Ned can choose to bend the knee to Joffrey in spite of his knowledge (which would give him lots of negative traits, I'm guessing)....Joffrey/Cersei can choose to have him sent to the Wall rather than behead him... Robb can choose to bend the knee (getting the same negative traits as Ned, I imagine) or do as he did OTL.
The point is that there are lots of unexplored alternate options that are screaming to be available.
