I'm playing as Count of York and go on crusade to conquer a single nation pagan province. I win the battle and the enemy leader sues for peace offering 300 gold. I choose decline and the seige continued. Then I won the seige, but the county was not in my control. I could find no reference to the rulers who previously held the province. When I hover the mouse pointer over it, it said "owned by kingdom of england. That's fine, but why am I not in control of it? Why can't I create a count title for that province?

Another thing: Is it known that a character can end up with several claims to the same title. I have five claims on the same title, count of ???. It happened when the previouse count of that province died and I was the heir that took over.

Pagans and religious enemies are conquered and added to the lands of whichever lord's army grabbed the province without need for a peace treaty. (In EU2 terms, whoever had the siege).

On your action screen, click "grant title" and you'll see County of <Whatever> that you can create.

That's just the problem. I can't grant the title. Why? I also noticed that when I hover the mouse over my army a bunch of other regiments show up under different rulers within the my Kingdom. Did my leige join in my war without me asking him too? Is this why I can't create the title. If so, that is low to steal my victory. Even though it's still a victory for England. Help, what gives?

The liege lord can - and in my experience almost always does - declare war when one of his vassals goes to war.

As for the siege, as I understand it, the highest-ranking noble in the besiegeing army grabs the province when it falls. You can see who that is by clicking on the province during the siege; the portrait of whoever will get the province is displayed above siege animation on the left. Not much to do about other than be on the spot when declaring war, if possible, and having a lot of troops on your own, so you can get the siege over with before the King arrives.
 
This may be WAD but it should be changed somewhat. Maybe every once in a while it could happen to be "realistic", but what gets me is that I am in my second generation and have spent a lot of time working to improve my dynasty. At the least I should have recieved some amount of prestige and piety, even if my leige ripped me off. This was the first war I've fought in some 50+ years of game play and I was completely ripped off. Like I said, may be realistic somewhat, but please balance that with fun.
 
From my experience, you don't get prestige from warfare.
