I just got a new "widescreen" monitor ( default res is 1600 x 900 ) and when I try to load EU2 up, it looks oddly stretched sideways. Is there a specific resolution I should set the game on, play in windowed mode, anything like that, to prevent this?

(if it matters, it's also a new comp with Vista.)

Maybe your monitor can avoid stretching image (with black stripe on each side of the screen). Better solution is Resolution Changer by Unknown. Not perfect, with it, be aware you won't be allowed to use the mouse in the bottom of the screen after 1024 lines... otherwise instant CTD...

See this thread for information.

EDIT: Relolution Changer won't change the way country selection screen is displayed (always 800x600) and you will have to check your monitor for this and avoid stretching anyway.

If only EU2 had a true native resolution changer... :)

For Vista, just avoid installing EU2 in Program files folder. AFAIK, otherwise savefiles will be located elsewhere and not available.

Well, it's more the shape of the display than the number of lines that's bothering me, so perhaps you can explain how to force it to stay in the old shape and have the black lines down the sides?

From the "EU2 on Vista" thread, which I read before I installed, I got the idea about the directories and installed Europa in its own directory directly under c:, and I'm assuming therefore avoided the problems. So thanks for the tip there.

Check the settings of your monitor and corresponding documentation if needed. You should have buttons for such settings. This is related to hardware, not Vista.
