I have a laptop with 1280x800 screen, and EU2 runs fine, but the game screen is like the size of a post card, which is pretty annoying. I see that Paradox games don't support widescreen, as Crusader Kings is a box in the middle of the screen, but at least it's a full-sized box, EU2 is ridiculously small. I tried to change the game resolution from EU2 Settings, but the maximum is 1024X768, which is weird as on the PC I had before the max was 1200Xsomething. Does anyone know of a fix or something?

You can try Lord Ederon hexa wizard. This is not supported by Paradox.

Your screen can't do 1280x1024. Since the default res. for Crusaders Kings is 1024x768, EU2 should appear to be the same size.
