CK2 worked last night, and for most of today, and now I am trying to play it again and it is crashing

So since HF has dropped it has went from working to not working multiple times
BTW we do have one report of the firewall ZoneAlarm causing CK2 to fail to start. How and why that is possible I cannot see, but do you happen to have that?

Nope I dont have that AV

That error.log seems to display the critical problem - mine is empty.
[texturehandler.cpp:197]: Couldn't find texture file: gfx/models/hlup_normal.dds.

[gfx_dx9.cpp:2302]: GfxCreateTextureFromFile failed with error: Invalid call

[gfx_dx9.cpp:2302]: GfxCreateTextureFromFile failed with error: Ran out of memory
Interestingly enough my installation does not have that file either but it is not called out as an error. I suppose you could try copying one of the other .dds files in that folder to that filename, but I rather doubt that will help.

Did you end up updating that video driver to a November version?

Don't have ZoneAlarm just Mcafee and Windows defender (which I have turned off)

Yes my driver is up to date, I updated it sometime last week
 
I don't know then, this seems to be a problem unique to you.

Is it possible to uninstall McAfee entirely? You might need to use the free revo Uninstaller utility for that purpose, AV apps are often deliberately hard to disable or uninsall.

Please install and run the free utility Speccy. Export its output to a text file and attach that here please.
