Activating journals sounds like there is a limit to how many can be active at the same time, is there such limit?

No such limit, you can pin or unpin the ones you want to be more/less visible though.

Does the fact that the Hannoverian Succession exists as a Journal entry imply that we'll be able to do something about it? Is there an outcome where the UK retains the union?

Journal Entries don't always have completion conditions! In this case it serves as a reminder to the player that they will eventually lose Hanover. Behind the scenes we also use it to subtly ramp up the chances of King William dying, because it wouldn't be much of a Victoria game if Queen Victoria doesn't ascend the throne until 50 years into the game.

This system seems nice! It feels weird that the canadian confederation would be created by Great Britain rather than by the United Canada, but I guess both are possible in the game?

Yes, there's a version of this for overlords and a version for subjects!

You need to use the most dangerous production methods while failing to invest in workplace safety.

Does this system also replace the traditional Decisions systems of other PDX titles? Looking in particular at HOI4, it seems pretty similar if perhaps less customizeable on the GUI aspects.

We still have Decisions, and we'll talk a little about them in the future.

Can Journal entries be shared globally with multiple/all countries contributing to/working against them? Could you have a mod where different production methods have varying effects on a contributing to awakening Cthulhu, with a journal entry that allows all countries to keep track of the 'progress'?

Yes, you absolutely could do that. And should.

DDs are written in advance, I believe they are ready Mondays. Some content creators for example get the DDs prior to make their videos.

That's right - DDs are prepared and drafted in advance, which results in publication date being incorrect. Sorry for that!
