New to these forums and this game, bear with me if these have been reported already.

Vanilla install + the latest "public" patch (1.04 I believe) no mods on Windows XP.

First weirdness:

Created a Bishopric and noticed that the only person I could give it to had a dull picture. I checked around until I found the individual (not related to my dynasty so it took awhile) and sure enough, he had died in 1085. The game allowed me to make him the Bishop anyway on creation of the Bishopric and he appointed councellors and has become the Undead Bishop of the Canaries.

Very Odd, as it seems he'll never grow older and will never lose the title.

Second weirdness:

Same campaign, I had conquered enough territory as the Duke of Pisa to declare myself King of Maurentania (sp?). I had 20ish counties as vassals and decided to hand my old title of Duke to my heir apparent (it was my only "Duke" title, if that matters, and my original one). Immediately all my other vassals switched alliegance to him rather than staying my personal vassals. I can only assume the act of giving away my original title caused this, but I don't have a savegame to test.

Welcome to the forum! :)
You might want to read to the forum rules, specifically the bug reporting rules once again. First, it is stated that you should report only 1 bug per thread, and second that you should check the existing bug list to avoid double reports. ;)
As far as the two bugs you mention are concerned, they are indeed known.
For the undead bishop: Just restrain yourself from appointing dead people, and if you find some undead cleric somewhere kill him with the "DIE" cheat. (You do that by selecting his character screen, then press F12 to open a console, then type DIE and hit enter, then F12 again to close the console.)
For the problem of giving away your old duke title when you upgrade to king, just don't. Vassals "remember" to which title they pledge allegiance, not to which person, so you can get some strange results.
