Since I voted for Byzantine-Spanish War, I will give some a ideas. Well, first of all, major nations: Spain, Netherlands, Byzantine Empire, Austria and France.
This should be Mission-based scenario. Missions:
Netherlands: You will gain VP for each province in Netherlands you control.
Byzantine: You will win automatically when you will sign favouring peace with Spain and Austria.
Spain: You will gain VP for each your non Iberian province you control.
France: You will gain VP for each your National Province you own.
Austria: You will gain VP for each Balkan province you control.

I almost forgot!
Alliances:
Anti-Habsburg League: Byzantine (leader), Netherlands, Prussia, Hessen, Saxony and France.
Habsburg League: Spain (leader), Austria, Bavaria, Kleves and Cologne.
Territories:
Byzantine: Just like Turkish borders in Europe in period of 30 Years War. Also, all the Anatolia, Mameluks, Iraq and The Hejaz.
Netherlands: The Hague, Holland and Friesen.

Why not give Zeeland to the Republic too ? After all it was an integral founding member.
