I am working my way through my first GC game, I have the AI agressiveness set at NORMAL. Will AI attack me of its own free will at this level, or will it only do so if I have attacked a country they are allied with?

They will attack you but in a rational way, which means when it is felt that they have a fair chance to win against you man-to-man.
I.e., when you're ravaged by religious rebellions and weakened to such a point, isolated with everybody who hates you, without allies, etc.
Plus, the more you don't respect the international war 'conventions' and treaties, the more countries will go after you to teach you a lesson of 'savoir-vivre'...
