On the one hand, thanks to the Telltale Game of Thrones series, we now have a good glance at House Forrester in the Clash of Kings bookmark, including the ruler, his wife and all his children, even including their Maester and Castellan and Master-at-Arms . We know what their house sigil looks like, as well.

On the other hand, on his journal, GRRM seems to hint at nothing being canon to the books except what he writes, and the game is clearly meant to be TV canon.

Still, since the alternative is to basically just make things up, it would seem like a nice addition.
 
He never specifically states that it is canon but rather that he only controls what is Book Canon, the HBO fellows decide what is TV Canon, and I'm pretty sure the mod follows the Book Canon.

If anything it might be possible to include the forresters in the game as GRRM does state the following:
"The Telltale guys worked with Ty Franck, who was my right hand here for half a decade."
It's atleast something to take into consideration, I do not know what the mod developers have to say about it though.

THe devs responded that they do plan to include the Foresters in the future. The mod already includes other non-canon characters (I think?).

The mod doesn't blindly follow the book canon. I think that it follows the books canon, opting for the book's version when there are multiple choices i.e. there is contradicting data. However, it freely takes from the adaptations the supplemental data which in no way contradicts the canon. And that is in the end how it should really work. The AGOT mod already includes e.g. the Sarwycks and Westfolds from the 2012 GoT RPG video game,

I'm not even pretty sure, I'm certain. Nevertheless, since GRRM is hardly likely to flesh out the Forresters much in the books, I doubt it would prove much of a problem.

We do plan on including them but as we only have episode 1 and know little of what happens to them we couldn't really add much past the actual characters... that being said I plan on doing a little bit of work on them

We have no information yet on what House Forrester's situation is by the time of the Feast for Crows bookmark, since we haven't yet gotten to that point in either the game or the TV series. All we know is that in the books the Forresters are vassals of the Glovers, who have declared for Stannis, and are supplying Stannis' army with scouts from House Forrester.

Nevertheless, without spoiling anything, Episode 2 of the Telltale series gives a good placeholder for who to make lord of the house until the series says otherwise.
