Just quickly did 2 quick sessions with just me and 2 bots and the Minocow spawned both times. With the Minocow having that much health is enough, but then having all them spawns with it at once is mad. It spawns with around 15 or so companions and it's just too hard to eliminate. (Well perhaps this is only with bots and may not be with human players)

Played a game earlier on Normal with a human DM and two other human players (no bots) and we were able to beat the Minocow by the skin of our teeth. It was all about kiting. My electricity mage was extremely useful with its stun bolt. I think a lot of success on the final boss and the game in general is based on how your party's class/abilities matches up against the DM's card choices. Your character might've been very weak against the Minocow and its hoards of allies.
