I still don't fully understand the tactics for combat, but at least I am finding lots of useful info that will help me figure it out.

The biggest factor I am finding out for combat though is attrition. Walk into a province with superior firepower and before you know it attrition has nibbled you down to a second rate army. I have found very little info on attrition other than a couple of tables that do not explain it very well.

If you can help me figure out this part of the game I would appreciate it.

Have you read my FAQ, or would that be those "tables that do not explain it very well" =)
 
One thing I noticed last night during sieges that was pretty annoying is that each force is rounded up for attrition purposes before adding them all up. Say you send in 10000 first, your unit size will be 10. Then that drops to 9500 and you send in another 5000. Now say that those 9500 become 9200 and the 5000 become 4500. If you add those numbers you get 13700 so you'd think your unit size would be 14, but no, each is rounded up first so you add 10000 and 5000 and your unit size is really 15. The more armies you send in to aid in the siege the bigger the problem becomes. In this instance I had something like 8000 troops but my unit size for attrition purposes was 17!

Note that Winter, Tropical, and I think Mountain terrain effectively reduce the supply of a province by 10, 5, and 5.
