Well besides those, I am not sure there are many tutorials around. But they are still a good read :)

Other than what they tell you, My suggestion would be to pick a medium-sized country that is independent. Either a small kingdom like Denmark/Sweden/Poland, or a large independent duke (like Apulia). These give you enough options to not get bored, but not too many things happening as to confuse you.

Run a few test games. Don't worry about making mistakes, as long as you learn something from them.

Otherwise you can always post specific questions regarding functionality or gameplay here, and someone will usually bring a helpful reply fairly quickly.

Edit: Just keep in mind that the focus of CK is character based, unlike EU/HOI where you play as a country. You need to keep your family in power, and make sure heirs are produced :) ... as well as try to expand your realm through warfare or marriages.
