I united Westeros but it seems creating the iron throne can't be done, this is somewhat disappointing as I thought this was the point of the start? Am I missing something?

The Iron Throne is the empire tier title, if you've unified Westeros you have created it.
Oh great. Obviously I'm missing something then. I don't see the option :/ do I need to own a certain province?
I think you just have to have finished the conquest and not be at war, but I'm not at my pc to check at the moment.

I'm not sure. The event is start date specific then? Not just bound to dragon conquest or the character?
It's based on an event chain that only happens for Aegon if you play in the War of Conquest scenario.

It would be cool if you could build an iron throne in any province if you have westeros and dragons or something.
You do get the option to put your capital in several places after the conquest: King's Landing, Dragonstone, Oldtown, or Harrenhal, I believe
Each one redefines the Crownlands, so each capital will balance the Lords Paramount slightly differently. Harrenhall for example will strengthen the Stormlands and weaken the Riverlands. Stuff like that. They will all also give you different amounts of prestige and cost you different amounts of Gold.
