In my latest game, I'm trying very hard to make an Italian empire, with Rome as my seat of power. The problem? The bloody Pope. I want to stay Catholic, but every once in a while, the Pope will demand Rome back and if I don't give it to him he excommunicates me.

Is there a way to hold onto Rome and stay Catholic too?

You can use the papal_events file in altered bookmarks. Since shattered world must also get rid of the pope, that file will change it back so he only demands the barony and not the county.
 
I'm just playing as the doge of Amalfi (Italian Empire) and conquered Rome, but in 100 years the Pope never demanded the city back from me. It was just always West Francia or the HRE that DoWed me for it... seems pretty strange to me...
Also when I give him back the city, the Pope turns Patrician (because he now only got the city and not the church). At last I think, if I set up an anti-pope, he should become my vassal and gain the title of the Papacy, if I give him the province... o_o

Try to vassalize the pope. I've noticed when I do that as the HRE it tends to mean the pope never bothering me.
 
It shouldn't be a problem anymore. We changed the event itself so that the pope will only ask for (and only recieve) the Barony of Rome, not the county.
