How exactly would one go about placing or removing CB shields? I know this has to be done by editing the files, but how, and which files?

In the .inc files, add the province number to the core provinces list of a nation.

I agree, you just have to remember which particular spelling of the name has been used!
Adding or removing CB shields is one of the easiest things to change in a scenario, but it can affect the game quite nicely (well, the IGC adding some coastal CBs to the Iroquois doesn't seem to have done anything!
