I recently bought a MacBook Pro. I was thinking I would have to install Windows in order to play CK but to my delight there is a Mac version on the market.

Question: Has anybody played both the PC and Mac versions and is there a difference in game stability and features of the game? If I get the "complete" version for Mac (CK + Deus Vult) will that include all the changes made to the PC version?

The Mac version does not have the Deus Vult 2.1 beta patch, which fixes some critical bugs and makes the game more stable.
I have also heard that Mac users have problems running some of the mods, and the game crashes more often -- no firsthand experience since I do not own a Mac.

Multiplayer Mac/PC (if you care about multiplayer) is also not compatible.
 
I was a Mac user up until I went to college. I never played the Mac version of CK, but I can confirm that a lot of mods built for the Windows versions of Paradox products do not work (without extensive work) on the Mac version.

Like Jordarkelf said, Virtual Programing does not convert the beta patches to Mac. Also, I believe Mac fan community is pretty small.

If you're going to be playing a lot of Paradox games I'd suggest finding a cheap copy of Windows XP/Vista/7 and dual booting. If you're only planning on playing CK every once in while, the Mac version might be adequate.
 
Well I went to Mac for a variety of reasons but mainly because I got tired of Windows. (Yes, not good if you like Paradox.) I really don't want to have to put Windows on my machine just to play Crusader Kings. I don't use any mods, so all I am concerned about is if there are major bugs in the Deus Vult expansion that make the game unplayable. (I never got Deus Vult for PC so I don't know.)
 
You won't have the 2.1 patch, so your game will be crashing a lot, (AI-lead) crusades will be nearly impossible since Christians can't pass muslim lands they are not at war with, and you'll have the pledge bug: every single independent count or duke will pledge to a strong ruler within days.
You will end up with one single muslim realm stretching from Persia to the Pyrennees :(
