I was wondering if this happens, and your king doesn't die horribly soon after (see Suenik the Beleaguered AAR) is it possible to get other characters who are of that non-Christian faith, and create a non-Christian European kingdom?

If I am understanding you correctly, you mean is it possible to get your ruler converted to another religion, and from there create a kingdom of that religion?? ... yes it is. But first of all it will be hard, and there needs to be specific steps you need to do. Also, once your ruler turns non-christian, you will no longer be able to reload as him, unless you mod the game for it. But if you mod the game to allow for non-christians to be playable, you can just start as one.

To convert, you will need to be a vassal of a ruler of the religion you want to convert to. That will be the hardest part. Once you are a vassal, you will eventually get en event that will let you convert to your liege's religion. Once you have converted, and you have advanced to a king-level title, all your vassals will eventually get the same event that will let them convert to your new religion. Any character in the realm taking the ecclesiastical education, will, upon completion, convert to your religion too.

But as said, once you save and exit, you will not be able to reload unless you mod the game.

When you say mod, do you mean an extensive process of rewriting lots of stuff or just a simple yes no change? Like is there an area in the code that says something like "Muslims playable = no" and then I just change that to yes and they're playable?
 
Aragon went Moslem in my last game. Its quite common to get mixed up at the county level, but thats the only time I remember seeing a Moslem King in a Christian kingdom.

Heir given a province in the holy land, rebels, swears allegiance to some Moslem, converts, and eventually inherits.

Sadly no ... but there is a mod (that has made changes to the actual .exe file), that allows you to play nonchristians. But the game wasn't designed for t, and I believe there will be some weirdness while playing a non-christian realm. You should look in the modding sub-forum for the mod.

I tried pagan mod before DV came out, but it soon lost it's appeal because I started to get AI events, which are there to help the AI controlled pagans to survive.
