Is it worthwhile to build it? Does it really thwart the growth and strangth of the dragons too much?

Otherwise if a dragon flies away to Dragonstone (which I hold), is there a way for me or another character to tame it again?

The dragon pit reduces the live span of a Dragon by I think one third and the growth rate is half as much as for a dragon outside a pit. Growth rate is normally a 50% chance per year to get +1 martial, 25% if you have a dragon pit if I'm not mistaken.

I'm not sure about the Dragonstone taming.

In my games I try to avoid building dragon pits.

Dragon pits seem to be advantageous once you have lots of dragons that are producing lots of eggs. When you're first starting out with that first egg, not so much because with the shorter lifespan they will have a less likely chance of producing an egg in their lifetime.
