Have a few questions.......
1)When the Dutch start to revolt, and the Netherlands are formed,is there anyway to switch to that country,in the middle of the game?(and does this also work with countries that form like Burgundy,Corsica,Aragon, etc)
2)Does the US revolution actually kick in?(I've played the game through only once,I don't recall actually seeing the US form or even revolt)

1. Yes. Simplest way is to save your game, exit your game, load up one of the scenarios with the dutch in it as the dutch, then load your game. You'll start out as the Netherlands in your game, and then you just have to save it to be the dutch from then on.
2. It can happen, but it isn't hardcoded. I think that revolt risk in English colonies in America increases during the historical time period, but nothing as severe as the Netherlands. If the US forms, it's by pretty much blind chance (at least starting from the 1492 scenario).

How does it work with other countries? So,would this work?I play the 1492 scenario.......as say France, around 1520-ish Corsica revolts, declares independance.I save, edit the 1492 scenario file, change one of the major nations from say Turkey to Corsica.I go back into the game, select my save game, and choose the Corsica flag?

Well with countries that are unselectable in normal scenarios, it's a bit different. I think that you can change the tag of the player nation somewhere (for example from TUR to COR), but can't be sure atm. I'll take a look and get back to you, but if you want to try it on your own go ahead.
