Well, you will probably have to leave it to the Pope to decide who you are going to crusade against. Preferably heathens I guess :D

Lithuania and Prussia wasn't christian. And then there are off course moslims in Spain...

That's two different questions :D

European non-Christians would be in the east and north. Northern Scandinavia, baltic tribes, lithuanians, turk nomads... Then you have Muslim Spain, Muslim Sicily...

In addition to these you will probably have the possibility to figh anyone opposing the pope, heretics like the cathars, bogumils etc. I hope latin kingdoms can attack orthodox countries (like the Norman attacks on Byzantium).

They certainly should be able to else how will they control southern Italy.:)

Northern Scandinavia? I should say that nearly everyone except a few kings and nobles were still heathens (asabelievers)..

Well, you don't need to worry too much about the Byzantines if you want to play Norman Apulia - by 1066 they had confined the Byzantines to the area around Bari and Brindisi. Muslim Sicily is a more important target, as the Normans only owned the northeast corner in 1066.
 
To the best of my knowledge there was never a Crusade officially called against the Orthodox though it was discussed several times. The Byzantines were too good at political intrigue and taking advantage of Western rivalries. The Fourth Crusade was supposed to be headed for Egypt but...certain circumstances intervened and the Pope excommunicated the Crusaders for not attacking the infidel. However once they were successful in bringing down the empire he quickly reversed his sentence. Nothing like victory to reopen the way to paradise!
