So, at least from what I've seen on youtube, most/all resources are finite in the game. There is X amount of metal that can be mined in your little corner of Mars.

And most/all the buildings require some resource for ongoing maintenance.

So, this seems to mean it's impossible to 'survive mars.' Eventually all the metal is gone, your pipes leak and can't be repaired, and then everyone dies from lack of oxygen or whatever.

Or am I missing something? Cause that seems like a big old waste of time...

In at least one of the Nikki and Sussie's videos they talk about some buildings to mine depleted metal and/or concrete deposits, as well as some recycling things (can't remember if buildings or units) to get some resources from "waste".
I haven't seen the video from last week, but it was supposed to have a build that Nikki worked on it for a while, so maybe is more "late" game than other videos (although I really doubt they will publish a late game build in order to avoid mystery-spoilers and so)

I'm pretty sure deep mining still isn't infinite. I believe there is a wonder or similar that actually allows you to mine infinite resources.

Yes there is and you can see it in the techs thread. Mohole mine produces an infinite amount of metal and rare metals. There is another wonder that is effectively an infinite concrete harvester. There is already infinite water from the vaporators. So that is all the basic resources covered.

I like the idea of deep resources and water to extend gameplay, but I fear that once I have the tech to find them, I'll have to tear down a bunch of things to get at them, maybe even a dome. Which means for me, the commander that gives the deep scanning tech from the start will be my default choice. Knowing where to build your initial domes in regards to both regular mines and deep mines seems quite valuable.
