Hi!
Could you please double check whether all the modes are in fact disabled? The crash log indicates mods being in, so I would appreciate if we could exclude this factor 100% :)

After some investigation, the crash issue is more common and our team is already on it. Please, be on the lookout for further game updates :)

In the meantime, you can try some of the solution which helped other players, e.g.
  1. Resetting game settings- You can access it by going to "C:\Users\<username>\Documents\Paradox Interactive\Crusader Kings III\"
    Delete the CK3 folder and then re-launch the game.
  2. Swapping between Graphics renderer Vulcan/DX11 in the game settings
