I was enjoying the game I started on the Crowned Stag playthrough, but I noticed well, I can't really find Danny! And then I started to think, what else might I be missing... I didn't even see Joffrey either! SO! Since I understand this is CK2, and most likely not a lot is going tohappen like the show, it got me curious. What would be the best logical start for everything to be set up with all of them in there? Would it be the Northern Rebellion? Or maybe at the greyjoy rebellion?

For when basically all of the show characters are at LEAST born. And can be set forward in a path.
 
Dany is a babe in Braavos in the Crowned Stag, her brother occasionally shows up in claimant rebellions if Robert screws up. A Clash of Kings is the bookmark you're looking for if you want Dany and Joffrey.
 
If you're looking for a start date with all of the canon characters at around their canon ages, then you're best bet is to select the Clash of Kings scenario and manually move the clock back about a year or two.
It will be a completely sandbox game as very few of the lore events will fire outside of the scenario, but it will essentially be right before the books start.

Yeah I like doing this. It also means, if you play as Eddard, you can catch Jon before he goes to the Night's Watch, and if you wish give him a a cadet dynasty which I always find to be cool.
