concerning all those monarch-stats downgrading events, what is the best thing to do? Taking the stat-hit or the other option?

It depends... Some monarch-stats downgrading events are temporary but they can have an impact on other aspects of the game. There is no general rule and you have to see if other choice (if available) is "worst" or not for the situation.

Not really... If France is Catholic, both factions will form. If France is Protestant/Reformed, only French Catholics will form.
are there any prerecquisites for Jeanne d'Arc to appear? It's 1434 in Evil Apple Swapping, the murder of the first Burgundian duke (Jean le Bon?) didn't take place, England holds the north of France, including Paris.

For Dauphiné, only in Meeting at Chinon in 1429 but only if some French provinces are still under English control and if Burgundy didn't head the Regency as result of the Legacy of Charles VI.
