Playing as the Hautevilles in the 1066 start, I joined the Byzantine Empire and converted to Orthodoxy. However, I can't seem to get any Orthodox ministers to appoint, so I'm not sure how to handle this. I've tried invited a minister to my court, but that hasn't let me appoint someone.
 
If you're referring to the Lord Spiritual council position, they need to be priests with an actual temple holding.
 
I thought you could "invite holy man", and tell him to take holy vows. Then you can appoint him to your council.

Actually, I think that does work now, yes -- monks and nuns can also have the title.
