When the next official CK2 patch will be published, the mod will be automatically playable or it will be necessary a mod update before paying it again without stability issues?

Note that Paradox puts the older versions of the vanilla game as "betas" in the Steam beta tab, so you can revert to an earlier version to play this mod while waiting for the mod to be updated to a new patch.
