Do Vassals have to control a 66% of ducal provinces to be able to receive a Duchy title?

In the game, I am the Duke of Bourbon and have managed to become the King of Aragon... I have eight Duchy titles, and it seems I cannot give them to my sons (all of whom are Counts) because the 'Grant Title' button is in grey, and tells me "You don't have any Titles to grant".

I'm playing CK with DV and all the official patches (including DV 2.1 Beta).

It sounds like you only have a demesne of just 1 province. If you just have 1 province then you can't grant away any title.

And just to be sure, your sons have to be your direct vassals of course in order to be able to give them a duke-title.

Oh, that's the reason. Thanks! (It seems it's nowhere mentioned in the manual...)

There is alot that is not mentioned in the manual ;) .... or have changed drastically since the release of the game, through 5 patches, one expansion and a couple of beta-patches.

I have the exact same problem in my game as King of Aragon. The only difference is that I have a demesne of 12. I have given count and duke titles to my sons before, but now all of a sudden, I can't.

What gives?

You can only grant Duke-titles to your Counts. If your son isn't a Count already, or he belongs to a Duke, you won't be able to grant him a Duke-title.

If that's not the problem, or you can't grant count-titles to your courtiers something really weird is going on.

Do a save/reload.

I found out that the child in question, was with another spouse, than my character's current.
Also I had the child in another court as a fosterling. Perhaps that could be the reason? The homecomming event has happened, but maybe the game still "thinks" that the child is abroad, even though he is listed as a 7 year old courtier in my court... Maybe it'll de-bug itself when he comes of age.

AFAIK you can't grant titles to people with the fosterling trait, so that is most likely your problem.
