You can patch directy from 1.00 to 1.07, that should not cause any problems.
Try renaming your AVI folder, thats usually the first advice in case of frequent CtDs.,

Rename it to AVI_back, that way you can restore it in the future if you like.

You only need original fresh instal, then 1.07, then latest beta patch.
