For those of us that like to recreate the holdings as they where back then, would there be an option, even as an DLC, to get a way to see how a settlemeent developed back then so we could get suggestions on what type of holding that barony should have and maybe even what buildings it had at certain times?

Holdings are gameplay abstractions that are named with relevant place names. At an earlier start date, you can check the history files to see how the game expects they grow. It would be pretty neat to steer the realms in the same direction they went IRL, at least.
