I'm sure I've done this with Victoria before but I cant seem to find where to do this with EU2. Which folder do I need to go in?

go into /config/text.csv and search for your country's current name until you find a section like this:
ENG;England;;;;;;
FRA;France;;;;;;
etc
and then replace the name with it's new name.
