I've been playing as an Aramaean and don't really like being called Sultan, but I can't figure out what files to edit to change the title to Melek or something else.

In any localization file;
<tier>_<culture>;<cultural title>;;;;;;;;;;;x
Be sure to save as a text file with filetype csv, in Windows-1252 encoding (ANSI), and don't use Excel or Notepad to edit it. Notepad++ is the preferred editor. Open Office Calc can be set up to load and save .csv files with semicolons as the field separator, but I can't find any way to do that with Excel.
