Since a can only have one Holding, my usual Strategy with grow, take over, same again doestn work anymore...

One of the few easy ways is to grow up in rank, so you can have vassals to hold things for you. and you can have more than 1 holding as you rise in rank, but not the huge demesnes of vanilla.

ok, but how am i supposed to overthrow my Overlord wich just one Region? Well i know... marry, get claims. get a Faction, wait for th moment and all
but to clearify:
If i take another Counts region and give it to my Brother he wont be my Vassal right? Because he has the same rank.. So i cant have any Vassals as long as iam a lord-Count.
(Expect Citys and bishops ofc)

you have several ways, have a high stewardship -> marry an even higher stewardship spouse, that should give you at least 2 max holdings, and maybe up to a third
plot your way to a high lordship, marry your heir to a daughter of you liege, and go all murderhobo on the rest of her family 'til she gets the title, in time the high lordship will be yours
or just conquer the hell away, you can have one or two holdings over the limit without too much of a penalty
or the easy way
get a dragon, proceed to conquer the world in 5 years, mostly spent traveling.
the last one is only easy IF you are willing to sacrifice half your family after you got a dragon egg.

Plotting is definitely your friend in early generations of trying to build a new dynasty
