Can anyone please enlighten me about how I could change the map, which program should I use to change it and how it works. Furthermore I would like to know how you can change or add extra trade goods (if it is even possible).

It should be possible to add additional trade goods by adding things to the tradegoods text file and telling provinces they have this new trade good. Then somewhere in the interface folder there will be graphics in a standard format. Luckily the graphics are static and therefore easy to mod.
I think there is some scope for extra goods to raise the variety a bit. This would need a bit of research and some care in getting it right.
The easy thing is to think up a list of potential trade goods and their prospective effects. Tin, lead, wool, pigs, silk, marble, papyrus and olives come to mind right away.
The difficult thing is working out the role these goods might play given there can only be one trade good per province.
