I can't find the button in the religion tab or when would changing the pantheon deity. So, where is the button therefor or what are the prerequisites?

You need the DLC "Magna Graecia"
Deification is to my knowledge one of 3 mechanics that is DLC locked. The otehr two are wonders (you cannot build without the DLC Heirs of Alexander) and Distinctions (you do get the basic one for free; also HoA)
