Is there an easy way to increase the text size in game for better readability for those who do not have perfect vision? Changing the resolution makes the font bigger but make it blurry, which does not help.

Sadly, no, there is no good way of doing this with the current engine (let alone an easy one).

I always ask this question with all Paradox games: can I increase the text size? Too many hours everyday staring at 2 lcd screens... With a 1920x1080 res, I really have to put my head almost against the screen to read the text in a more relaxed way... Well, not that relaxed...

Is it possible to create custom resolutions? I'm assuming that if I cut my resolution in exactly 1/2 it would not be blurry as it would use 2 pixels for every original one.

There is, in the settings.txt that you can find in your documents folder. Be aware that the game will not run in less than 124*768 resolution though.

That would work, yes. You only need to switch it to windowed mode and edit the X and Y variables in the settings.txt file (see here for where to find it and how to enable windowed mode).
