So, I really like the IOs but the UI is pretty boring. The EU4 ones were so stylised and felt so unique. But the EU5 ones feel pretty generic and cookie-cutter copy and paste. Obviously, this isn't game breaking, but I just thought it'd be nice to have something more ornate to represent these grand institutions like the Catholic Papacy and the Holy Roman Empire.

Hard agree, I was viewing the Middle kingdom IO and was really sad to see the emptiness of the IO UI. Where I was expecting chinese royal colours, we basically got the same brown blue which is used for everything. I mean I kind of like that for the rest (it used to be very bad but has been improved a lot) but really for this IO I was expecting something extra, in particular because China is one of the, if not the, most influential and important nations. This is also not coming from some china fanboy which are storming the forums, reddit etc. to comment on the location density which will probably not matter all that much

I'd say the HRE and Papacy ones are pretty similar with their gilding, they just have a different UI orientation to help you know you are immediately looking at something different. The Mandate of Heaven one is more unique with the Dragons.

I think they are saving UI adjustments until last, but I hope they do inject a ton of style into them. I think the art they've produced is good, it's more about stylization at this point. I think the emphasis on browns is superior to their earlier emphasis on blues (which had a very minimalist modern feel), but I'd love to see more embellishments of silver and gold in general, but especially on big weighty systems.

The HRE and Papacy and Mandate of Heaven could all be given a lot of nice stylizations to fit in their theme. The Mandate of Heaven with some classic chinese flair, the Papacy with some renaissance stylings, and the HRE with maybe some medieval gothic motifs.

Indeed, incorporating diverse UI styles for better adaptability is necessary.
