Venice has been a problem for me lately. They've taken over a large chunk of the former HRE, preventing me form getting enough land to create a king title. I don't know how to beat them.
Because of their succession law I can't marry into the line, because their title is non-recreatable I can't usurp it, and the only way I could get enough prestige to grab the title is if I had a king rule for 150 years. Is there another way?
 
Rivalries decrease prestige cost for claiming titles. That's one fact you might want to keep in mind. Also, constantly check to see if they're excommunicated.

Or, though it is extremely gamey and cheap, you could spam him with your children as fosterlings in the hope that one of them is first in line when the doge dies.
 
Amass prestige in foreign wars and use it to claim his titles.

The prestige you get is based on the difference between your war score and the peace score in the peace screen, you want a high war score and a low peace score, then when the peace is accepted you will get the difference between the numbers as prestige. If your opponent has claims on you and you don't press them even though you have occupied all of their holdings you can get tons of prestige.
