Quite alright! I figured it out...
You can, apparently, have a Christian ruler of a Muslim state. I was going on a Crusade as the Duke of Brittany - later King of Egypt - and as part of that I got a lot of rivals to my Muslim adversaries. This one guy I got converted to Christianity and it turned out he was the major rival to this one Muslim kingdom I kept fighting against and because he was next in line they made him king (even if he had been actively supporting me against them). So they got an Arab Christian king to a Muslim kingdom.
The French, Burgundian, Spanish and Germanic kingdoms and principalities will retain their provincial size and as such will take longer to travel and have a much higher rate of attrition while the English/Scottish/Welsh/Irish 'manors' will be quicker to travel and cost less in attrition (I'm hoping that a certain 'trait' can be attached to the province size territories that will make them more difficult to navigate).
I've already started working on little changes in the game - Marshal is now 'Captain' while Diocese Bishop is now 'Chaplain'. Bishoprics are now 'Abbeys' while the pope is now the almighty Archbishop of Canterbury. To get around the naming conventions each office and title in the game (these for the most part will replace the 'country titles') will be titled 'His Grace' instead of 'Duke of' while the 'place name' will be the actual title, like 'the Duke of York' or 'the Captain of Calais' (so it'll read 'His Grace, the Captain of Calais' or 'His Grace, the Archbishop of York') while the counts will be reduced to 'Gentry'. Using the three different scenarios (Hastings, First Crusade, Hundred Years War) I've also been able to recreate the geneological chain from Rollo the Ganger to Henry VI, so things have been going quite well indeed.
Before going further in geneologies however I think that it would be a good idea to redo the map so that people can be directly assigned to certain locations. That'll probably take the rest of summer/fall.
Some suggestions I thought of while working on the mod include:
Overhaul finances - no more endebtedness and spending beyond one's means, even for AI characters.
Yearly payment of annual 'retainder' to one's courtiers aside from a 'signing bonus'.
More court interaction through various events (feasts, hunts, building projects, mercantile ventures, child-raising, scandal, etc.)
More available family members including extended family to ensure that any additional courtiers are servants or fortune-seekers.
More child-rearing and child-interaction events.
More wife-interaction events.
More church events.
Tournaments, feasts and fairs should be planned and paid for.
More opportunity for mercantile trading and investment.
More random events that provide interaction between courtiers.
Random quotes and verses that accompany random effects.
Reduce the numbers of troops - 1 gentleman with harness = 5 de maison archers = 5 hobilars = 10 livery archers = 25 peasant followers.
Reduce battle effects and troop costs.
Make accusations against people and have to defend against accusations: Bastardy, Witchcraft, Disloyalty, Treachery against the Crown, Adultery
As punishment for being found guilty, one can be banished, exiled, executed, tortured or fined.

Marriages between Courtiers - unmarried courtiers may seek to marry other unmarried courtiers dependent on prestige and money.
Borrowing Money when endebted - one may borrow from a variety of sources: peers, moneylenders, Italian bankers, wealthy merchants.
Borrowing from peers - they may gain a claim on your lands (put up as collateral) and/or they become your rival. Your Reputation also suffers.
Borrowing from heathen moneylenders - as in the current events, you may gBet heretic/excommunicated for dealing with heathens.
Borrowing from Italian bankers - gain Italian debt trait. You must pay back, with interest or risk losing heavily in Reputation.
Borrowing from wealthy merchants - gain Mercantile debt trait. You must pay back, with interest or be fined double what you owe.
Public executions of Traitors - a king you can order public executions of traitors at Tyburn or the Tower, while nobles and judges can order minor public executions. However all executions risk you losing Reputation and Piety and gaining traits like Cruelty, etc. - or gaining them if the person executed was unpopular!

I really want to be able to simulate so called 'bastard feudalism' (Livery and Maintenance) and the interfamilial squabbling as well as the rise and fall of the various noble houses that so characterized the late Plantagenet and Tudor periods.
Another thing I noticed in a test game was the madness caused by Schitzophrenia tended to result in an Ivan The Terrible like outburst that would have the king kill his family members. I was wondering if madness could be more moderated in that (as happened historically) Henry VI would not recognize his family, most critically his heir during his madness.
Also, a major part of the politicking (related to the madness issue) are the accusations of Bastardy to damage the reputation of rival political figures. If Henry VI refuses to recognize his heir then this could lead to the child being 'Accused of Bastardy' or someone could discover a rumor about a leading noble that accuses his father of illicit relationships (for someone like Edward IV, who was quite a ladies man and made a lot of unwise promises to a lot of women this wasn't too difficult) which would then place the person's inheritance in jeopardy. Just thinking of all the legal and international wrangling that rulers like Henry VI, Edward IV, Richard III and Henry VIII had over heirs and legitimacy, I think it's important to have in the game.
Anyways, I'll keep everyone posted as usual. I'm really, really happy that Jdrou made that little bit of info on how to change the game end time available. That's really made things possible
